Growing up, I was the kid who always had a home cooked breakfast before going to school. My parents were big believers in starting the day out right, and my Dad LOVES to cook. So on days when he wasn't traveling for work, I could always count on delicious smells drifting through the house to get me going. And to this day, I still try to eat a good breakfast before starting my day! So in honor of National Pancake Day(today!), and all of my school age years with awesome breakfasts, I made some yummy Whole Wheat Blueberry Pancakes!
Okay, okay. So, I know this recipe isn't exactly earth shattering or anything. But when I found out that today was National Pancake Day, I couldn't resist! Plus, we had some gorgeous blueberries in our fridge that aren't getting nearly enough love. If you're like me and make big pancakes, then this recipe will probably make less than called for. But it's so yummy, I'm sure no one will mind if you make more of this recipe!
Whole Wheat Blueberry Pancakes:

1 1/4 cups whole wheat flour
2 teaspoons baking powder
1 egg
1 cup milk, plus more if necessary
1/2 teaspoon salt
1 tablespoon artificial sweetener
1/2 cup blueberries
1. Sift together flour and baking powder, set aside. Beat together the egg, milk, salt and artificial sweetener in a bowl.
2. Stir in flour until just moistened, add blueberries, and stir to incorporate.
3. Preheat a heavy-bottomed skillet over medium heat, and spray with cooking spray. Pour approximately 1/4 cup of the batter into the pan for each pancake.
4. Cook until bubbly, about 1 1/2 minutes. Turn, and continue cooking until golden brown.
5. Serve, enjoy and start your day out right!
